The Baux Valley is olive-growing land par excellence and it has one of the most striking landscapes of olive groves in Provence. There is not only one Baux Valley olive oil, there are several olive oils: the dark, fruity oil, which has notes of mushroom and woodland, or the green fruity oil with its taste of grasses and blackcurrant.  These oils are comparable to great wines with a bouquet, a colour, a flavour and an elegance. It is the subtle blend of these varieties, a secret jealously guarded by each producer, which gives the oils a whole palette of different flavours.
